Pelmeni (Russian Dumplings)
Ingredients
For the Dough:
- 3 cups all-purpose flour, plus more for dusting
- 1 large egg
- 1 cup lukewarm water (or milk/water mix)
- 1 teaspoon salt
For the Filling:
- 1 lb ground meat (traditionally a mix of beef and pork, or just one)
- 1 large onion, finely chopped or grated
- 2 cloves garlic, minced (optional)
- Salt and freshly ground black pepper to taste
- 1/4 cup cold water or broth (optional, for juiciness)
For Serving:
- Butter
- Sour cream
- Vinegar (optional)
- Fresh dill or parsley, chopped (optional)
Instructions
- Make Dough: In a large bowl, whisk flour and salt. Make a well in the center. Add egg and water. Mix with a fork, then use hands to form a firm, elastic dough. Knead on a lightly floured surface for 5-10 minutes. Cover and let rest for 30 minutes.
- Make Filling: In a separate bowl, combine ground meat, onion, garlic (if using), salt, pepper, and cold water (if using). Mix well.
- Assemble Pelmeni: Divide dough into portions. Roll out one portion very thinly on a floured surface. Use a small round cutter (about 2 inches) or glass rim to cut circles. Place a small amount (about 1 teaspoon) of filling in the center of each circle. Fold the circle in half to form a crescent, pinching the edges firmly to seal. Bring the two corners of the crescent together and pinch them to form the characteristic round shape. Repeat with remaining dough and filling. (Alternatively, use a pelmeni mold).
- Cook Pelmeni: Bring a large pot of salted water to a rolling boil. Add a bay leaf (optional). Carefully drop pelmeni into the boiling water (don't overcrowd). Stir gently. Once they float to the surface, cook for another 3-5 minutes. Remove with a slotted spoon.
- Serve: Toss cooked pelmeni with butter. Serve immediately with a generous dollop of sour cream, a splash of vinegar (if desired), and a sprinkle of fresh herbs.
