Misir Wat (Spicy Red Lentil Stew)
Recipe & Instructions (US Units)
Ingredients:
- 1 cup red lentils (Misir), rinsed well
- 1 large onion, finely chopped
- 3-4 cloves garlic, minced
- 1 inch fresh ginger, grated
- 3 tablespoons Niter Kibbeh (Ethiopian spiced clarified butter) or vegetable oil
- 2-3 tablespoons Berbere spice blend (adjust to heat preference)
- 3 cups water or vegetable broth
- 1/2 cup chopped tomatoes or 1 tbsp tomato paste (optional)
- Salt to taste
Instructions:
- Heat Niter Kibbeh or oil in a medium saucepan over medium heat.
- Add the finely chopped onion and cook until well softened and golden, about 7-10 minutes.
- Add garlic and ginger, cook for 1 minute until fragrant.
- Stir in the Berbere spice blend (and tomato paste if using) and cook for 1-2 minutes, stirring constantly, until fragrant and slightly darkened.
- Add the rinsed red lentils to the pot and stir to coat them with the spice mixture.
- Pour in the water or vegetable broth (and chopped tomatoes if using). Bring the mixture to a boil.
- Reduce heat to low, cover, and simmer gently for 25-35 minutes, or until the lentils are very tender and have broken down into a thick stew. Stir occasionally to prevent sticking.
- Add more water if the stew becomes too thick for your liking.
- Season with salt to taste.
- Serve hot with Injera.
