Tibs (Sautéed Meat)
Recipe & Instructions (US Units)
Ingredients:
- 1 lb beef sirloin, lamb leg, or goat meat, cut into bite-sized cubes or strips
- 1 large onion, sliced
- 1-2 cloves garlic, minced
- 1 tomato, chopped (optional)
- 1/2 green bell pepper, sliced (optional)
- 1 jalapeño or serrano pepper, sliced (optional, for heat)
- 2-3 tablespoons Niter Kibbeh (Ethiopian spiced clarified butter) or vegetable oil
- 1 teaspoon Berbere spice blend (optional, for spicy tibs)
- 1 sprig fresh rosemary (optional, but common)
- Salt and freshly ground black pepper to taste
Instructions:
- Heat Niter Kibbeh or oil in a large skillet or wok over medium-high heat.
- Add the sliced onion and cook until softened and lightly golden, about 5-7 minutes.
- Add the meat to the skillet. Season with salt and pepper. Cook, stirring frequently, until the meat is browned on all sides.
- Add minced garlic and optional jalapeño/serrano. Cook for 1 minute until fragrant.
- If using, add the optional Berbere spice blend and stir to coat the meat. Cook for another minute.
- Add the optional tomato and green bell pepper. Cook for another 3-5 minutes, until peppers are tender-crisp and tomato has softened.
- If using rosemary, add the sprig during the last couple of minutes of cooking.
- Ensure the meat is cooked to your desired doneness (Tibs can range from lightly cooked to well done).
- Taste and adjust seasoning (salt, pepper, Berbere) if needed.
- Serve hot, often sizzling, usually with Injera.
