Curry Goat
Recipe & Instructions (US Units)
Ingredients:
- 3 lbs goat meat, cut into 1-2 inch cubes
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1-2 inch piece fresh ginger, grated or minced
- 1 Scotch bonnet pepper, whole or minced (optional, for heat)
- 3 tablespoons Jamaican curry powder
- 1 teaspoon ground allspice
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 2 tablespoons vegetable oil
- 4 cups water or beef/vegetable broth
- 2 medium potatoes, peeled and cubed (optional)
- 2 carrots, peeled and sliced (optional)
Instructions:
- Season Goat: In a large bowl, combine goat meat, onion, garlic, ginger, optional Scotch bonnet, curry powder, allspice, thyme, salt, and black pepper. Mix well to coat the meat. Let marinate for at least 1 hour, or preferably overnight in the refrigerator.
- Sear Meat: Heat oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Add the marinated goat meat in batches (don't overcrowd) and sear until browned on all sides. Remove meat and set aside.
- Build Flavor: If needed, add a little more oil to the pot. Cook any remaining marinade aromatics (onion, garlic etc.) for a few minutes until softened.
- Simmer: Return the seared goat meat to the pot. Add water or broth, ensuring the meat is mostly covered. Bring to a boil, then reduce heat to low, cover tightly, and simmer gently.
- Slow Cook: Cook for 2 - 3 hours, or until the goat meat is very tender, stirring occasionally. Add a bit more water if needed to keep it from drying out.
- Add Vegetables (Optional): If using potatoes and carrots, add them during the last 30-40 minutes of cooking, or until tender.
- Finish: Remove the whole Scotch bonnet pepper (if used). Taste and adjust seasoning (salt, pepper, curry powder) if necessary. The sauce should be rich and slightly thickened.
- Serve hot, typically with Rice and Peas.
