Curry Goat

Recipe & Instructions (US Units)

Ingredients:

  • 3 lbs goat meat, cut into 1-2 inch cubes
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1-2 inch piece fresh ginger, grated or minced
  • 1 Scotch bonnet pepper, whole or minced (optional, for heat)
  • 3 tablespoons Jamaican curry powder
  • 1 teaspoon ground allspice
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 2 tablespoons vegetable oil
  • 4 cups water or beef/vegetable broth
  • 2 medium potatoes, peeled and cubed (optional)
  • 2 carrots, peeled and sliced (optional)

Instructions:

  1. Season Goat: In a large bowl, combine goat meat, onion, garlic, ginger, optional Scotch bonnet, curry powder, allspice, thyme, salt, and black pepper. Mix well to coat the meat. Let marinate for at least 1 hour, or preferably overnight in the refrigerator.
  2. Sear Meat: Heat oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Add the marinated goat meat in batches (don't overcrowd) and sear until browned on all sides. Remove meat and set aside.
  3. Build Flavor: If needed, add a little more oil to the pot. Cook any remaining marinade aromatics (onion, garlic etc.) for a few minutes until softened.
  4. Simmer: Return the seared goat meat to the pot. Add water or broth, ensuring the meat is mostly covered. Bring to a boil, then reduce heat to low, cover tightly, and simmer gently.
  5. Slow Cook: Cook for 2 - 3 hours, or until the goat meat is very tender, stirring occasionally. Add a bit more water if needed to keep it from drying out.
  6. Add Vegetables (Optional): If using potatoes and carrots, add them during the last 30-40 minutes of cooking, or until tender.
  7. Finish: Remove the whole Scotch bonnet pepper (if used). Taste and adjust seasoning (salt, pepper, curry powder) if necessary. The sauce should be rich and slightly thickened.
  8. Serve hot, typically with Rice and Peas.
